Greetings & Happy New Year TRA | San Antonio Chapter Board & Members!
I just wanted to take a moment and thank you for entrusting me with the leadership of our local organization and re-introduce myself to those that I have not seen in a while or had the chance to speak with at length.
Having grown up in San Antonio I have been witness to the exciting growth and development the city has had, including and especially, our industry. My first restaurant job was at the first EZ’s location on Brees in 1990 when I was 15. After a year of making shakes, salads, and eventually fries, I had a feeling I was on to something exciting. When the collegiate soccer aspirations were quelled and subsided, I found myself still working in restaurants in the interim. I eventually landed and graduated from the California Culinary Academy in San Francisco in 2000 and then spent more than 20 years cooking on the west coast, Santa Fe, Austin, and Europe. Upon returning to San Antonio in 2010, I opened Max’s Wine Dive, Boiler House in the Pearl Brewery, TBA Cocktail Lounge & Snack Bar, Grayze, and most recently (for the second time in the same year) Full Belly Café & Bar.
While the past year has certainly represented the worst of what could happen to us, I am optimistic that 2021 will offer the rebound we seek personally, professionally, and spiritually. Please know I will do my best to work towards making this happen.
